This Easter Holiday I wanted to make something special for my boys, and since my hubby's has a Bulgarian background I found this Bulgarian easter bread recipe. It's called Kozunak. I am certain that many Easter Bread Recipes are similar. Not only was it pretty but it taste soooo good, and made the house smell like a Bakery! YUMmmmm. The recipe makes 2 Loafs, and we were picking at them all day long. They are sweet, I will use this recipe again for special breakfast/brunch.
What you need...
PART 1
4 Teaspoons of dry yeast
4 Teaspoons of sugar
1 large Lightly beaten egg
3/4 Cup warm milk to 110 degrees.. (about 40 seconds in the microwave)
1. In a large bowl combine yeast, sugar, egg, and warm milk, let this hang out for 40 mins in a warm space (if you want to add raisins you can soak them in rum and set aside to add later)
Part 2
1 cup of milk
1 cup sugar
1/2 stick melted butter
1/4 cup of oil (I use Canola Oil)
5 Eggs
1 Teaspoon Vanilla
3 bowls/or coffee cups (for mixing)
9 cups of flour
2. Heat one cup of milk and one cup of sugar in a saucepan till warm, set aside.
In a separate bowl add butter and oil together set aside. Separate 2 of the eggs reserving the yolks (for a egg wash later on) beat the 3 whole eggs with the egg whites and vanilla in another separate bowl. At this point your yeast should look like the pic above. Begin to add the milk/sugar mixture into the yeast first, then the butter/oil mixture, the eggs, and raisins if you want (I didnt use raisins),combine until well mixed
3. Slowly start to add flour, you probably wont use all 9 cups i used about 7.5 cups. You want a smooth slightly sticky dough. Transfer to oiled bowl, turning sough once to get coated on both sides and cover with oiled plastic wrap, set aside 1-2 hours.
4. Punch dough and let it rise again another 1 to 2 hours covered, it will double in size
5. preheat oven to 400 degrees, punch dough and slightly need for 2 mins. Then divide in half, divide the halves into 3 balls, and form in to long logs. Braid the logs on parchment lined sheet pans .Brush on egg yolk, and sprinkle white sugar on top. let rise another 30 mins. Pop in the oven, as soon as it starts to brown it will ready. It doesnt take long!! Remove from oven and let cool ENJOY!!!
They are so pretty and rustic looking. Taste sweet and fluffy. I will definitely make this again!
